Ingredients
Base
- ½ cup oats
- ½ cup desiccated coconut
- ½ wholemeal flour
- 3 tbs of coconut oil or butter, melted
Filling
- 1 cup dates, soaked
- ½ cup water
- ½ cup choice of any nut butter
Topping
- ¼ cup of dark chocolate melted
- OR to make this slice vegan use
- 2 tbs of cacao
- 2 tbs of coconut oil
Method
Combine oats, coconut and flour, adding oil or butter until mixture holds together when pressed. Press into a small slice tray lined with baking paper (this makes it easier to remove, cut and clean!) and place in fridge to set.
Place soaked dates and water in a small saucepan on a low heat cooking into dates break down and form a paste. Add nut butter and spread evenly onto the base. Set aside to cool.
Spread melted chocolate onto the slice and place into the fridge to set.
Use a hot knife when cutting to avoid the chocolate cracking.
