Coconut Chia Pudding

Coconut Chia Pudding
If someone says coconut, we're excited. If they say chia, we're super excited. If they say coconut AND chia, we're pretty much in heaven! We think these may be the easiest (and tastiest) breakfast/snack/dessert we ever have laid our pretty little eyes on. The prep takes under 3 minutes - which is amazing because we're not the quickest in the kitchen AND you can make them a few days before you eat them (or an hour if you're anything like us). Vegan, filled with superfoods AND perfect pre and post yoga (if only we could eat them during yoga classes...)
Ingredients
1 cup coconut cream or milk - if you're looking to lighten the calories we recommend going for a light version OR you can even substitute coconut water!
1/2 cup chia seeds (black and white both work)
1/4 cup honey or agave (or a little less if you're like us and don't have the biggest sweet tooth)
1/2 tsp vanilla extract

Optional flavourings
1/4 cup fruit puree
2 tbsp coco powder
1/2 cup super strong chai tea
2 tbsp shredded coconut (for that extra coconut kick!)

Method

Add all of your chosen ingredients to a medium bowl. Mix well, transfer into you vessel of choice (drinking glasses and shot glasses are personal favourites of ours). Refrigerate for 2 hours, top with whatever looks pretty and devour whilst making lots of 'mmmm' and 'yumm' noises (just you try and stop yourself!).

These are so easy that they can be made by children or partners with limited cooking skills (we have a certain someone who fits the bill...). See - we weren't lying when we say it couldn't be easier! Makes around 4 breakfast servings or 6 snack servings - depending on how hungry you are!
