If someone says coconut, we're excited. If they say chia, we're super excited. If they say coconut AND chia, we're pretty much in heaven! We think these may be the easiest (and tastiest) breakfast/snack/dessert we ever have laid our pretty little eyes on. The prep takes under 3 minutes - which is amazing because we're not the quickest in the kitchen AND you can make them a few days before you eat them (or an hour if you're anything like us). Vegan, filled with superfoods AND perfect pre and post yoga (if only we could eat them during yoga classes...)
These vegetable patties are a great way to cram extra vegetables into your day, they are quick and simple to make and can be left prepared in the fridge until you want to bake in them for dinner or lunch (or popped in the freezer for a later date). They can be made for burgers or into smaller portions and served in a pita as an alternative for falafel. Also an easy recipe that lets you swap and switch vegetables that you may need to use up from your weekly shop.
